Ini adalah resepi carrot cake yang sangat sedap dan anda harus mencubanya. Saya terjumpa resepi ini ketika melayari laman web beberapa tahun lalu dan mencubanya.
Sehingga kini ia menjadi kegemaran keluarga. Walaupun bahannya kelihatan banyak dan remeh tetapi hasilnya....membuatkan anda tersenyum.....anda mesti cuba ya!
Ingredients
2 cups plain flour 2 teaspoons baking powder
1 1/2 teaspoons baking soda 1 teaspoon salt
2 1/2 teaspoons cinnamon 4 large eggs
1 1/2 cups oil 2 cups caster sugar
2 3/4 cups coarsely grated carrots
1 (8ounce) can crushed pineapple
3/4 cup chopped walnuts or pecans
1 cup shredded coconut or desiccated coconut
Topping cream cheese frosting
1/2 cup butter
1 (8ounce) package cream cheese
1 1/2 teaspoons vanilla essence
1 lb icing sugar
Method
Sift together all dry ingredients.
In large bowl, stir together sugar, eggs and oil with wooden spoon until well blended, about 5 minute.
Add flour mixture a little at a time, mixing well after each addition.
Add carrots, nuts, pineapple and coconut and blend thoroughly (squeez juice from carrots and pineapple).
Bake in grease and line springform pan for about 60 to 90mins @ 180°C.
Cream cheese frosting
cream butter, cream cheese and vanilla.
Add icing sugar a little at a time and blend well.
Add a tsp of milk if the mixture too thick.

ReplyDeleteedi; yes, can pineapple yang biasa tu, then you pecah-pecahkan (hancurkan). make sure you squeeze the juice ye, kalau tak nanti texture cake berubah. carrot pun kena squeeze juice.

All carrot & pineapple tak payah pre-gaul dgn sedikit tepung dulu ke,mcm buat fruitcake tu? Or boleh lambak je dalam adunan ye?

tak payah gaul dengan tepung. Ni bukan fruit cake...ikut aje cara buat yang dah sedia tu...mix all in a bowl dan kacau until well mix...trial an errorlah dulu, lepas 2,3 kali buat mesti jadi cantik...

ReplyDeleteHmmmm, kerana baca dari blog kak jun pasal kek lobak merah yang akak buat, saya sampai termengidam dan akhirnyaaa..hari ni saya buat juga...tapi 1/2 dari resipi asal..dan sedikit penyesuaian bahan2...tapi i tell u kak ida, memang sedapppp kek ni...

ReplyDeleteThis is actually my first comment :) I have tried this recipe and resultnya memang awesome. Thank u so much for sharing! But I have a few questions for u. The coarsely grated carrot tu, kak ida just guna parut biasa and squeeze the juice kan? Or u are using food processor or blender then u squeeze the juice from there?
Another qs is, plain flour, wheat flour, and all purpose flour, are they all the same?
Lastly, if u do not have any self raising flour at home, but plain flour instead, how much baking baking powder u'll be using then? Is it 1 cup of plain flour = 1tsp baking powder? Do we need to add baking soda as well?
I'm a beginner, hence all the questions. Hehe sorry for taking ur time and thanks a lot!
